FSIS announced a revised Food Safety Guideline for Egg Products, updating prior guidance with additional scientific information and clarifications to help egg product facilities comply with existing regulatory requirements.

FSIS is announcing the availability of a revised Food Safety Guideline for Egg Products to help regulated facilities comply with existing inspection requirements. The guideline provides updated guidance for plants producing egg products that undergo processes such as pasteurization, heat treatment, cooling, freezing, or enzyme modification. FSIS revised the document to address stakeholder questions from the prior version and to incorporate additional scientific information and clarifications, including new guidance on sanitation practices, hazard identification, and alternative processing methods. The agency emphasizes that the guideline reflects its current thinking but does not create new legal obligations. FSIS is inviting public comments on the revised guideline through July 6, 2026 (Notice, 91 Fed. Reg. 24155 (May 5, 2026)).

Dates. Submit comments on or before July 6, 2026.
